Instructions to make Kung pao potatoes:
- Take 8-10 baby potatoes peel and cut into halves, par boil them and then drain the water..
- Take onion, capsicum and chop them into cubes..
- Dry roast peanuts and cashews and keep them aside..
- For making slurry- Add vinegar, corn flour, water, soy sauce, chilli sauce, Ketchup everything into a bowl and make a slurry by mixing everything given above..
- Now take a kadhai or a wok fry boiled potatoes by adding enough of oil to give them a golden brown color and then transfer it to a kitchen towel to remove excess oil..
- And then take a wok heat it enough and then add 2 tbsp Sesame oil chopped garlic, ginger and saute till you smell the aroma, then add chopped onion, capsicum saute again..
- Then add roasted peanuts, cashews and corn slurry into it and coat the potatoes well with slurry.
- Add some salt as/ your taste cook for 1 min to give it a nice texture..
- Garnish it with some sesame seeds or spring onions and enjoy hot 🔥.
