- Take 1 cup flour in a bowl add 1/2 tsp salt, 1/4 tsp ajwain(carom seed).
- Add 1/4 tsp kalongi (black seeds), now knead a dough(the dough should neither be soft not hard) cover and rest the dough for 10 minutes..
- Grind mint, coriander, green chilies to a paste. Mix 3 tbsp yogurt with this paste to make a raita..
- Raita, tamarind sauce and onion for topping..
- Roll out the dough, cut bite size puris, prick puris with a fork..
- Fry all puris in batches on a medium flame until light golden brown. As shown in the picture.
- Add 1/2 tsp salt and 1/2 tsp red chili powder to boiled potatoes and mash the potatoes..
- Add 1 tbsp oil in a pan add mashed potatoes sauté for 3-4 mins..
- Now assemble the puris, place 1 tbsp mashed potatoes on each puri, then put some chopped onion..
- Pour 1 tbsp raita on each puri then tamarind sauce and garnish with more chopped onion..
